PHOTOS ATTACHED ARE ALL THE ASSOCIATED DISHES FOR REFERENCE : This evening my girlfriend and I decided to treat ourselves to a nice Italian Restaurant, after looking around for a little, we settled in Carlos' Bistro. This has been by far one of the best experiences I've had at a restaurant. We had the pleasure of being serviced by Carlos and accompanied by his wife Stephanie, Carlos was incredibly welcoming from when we first entered to up until we left. Stephanie was assisting the other tables, but also came to greet us and assist with whatever we needed as well. Took my fiance here for our engagement dinner and absolutely loved it! We ordered the fried oysters and Carlos’ special lobster bisque. Then for dinner we ordered the filet mignon and filet a la oscar which was incredible. The flavors were amazing and at points all we could say was it was melting in our mouths. Throughout the whole dining experience, Carlos was very attentive, respectful, and professional. Additionally, he is a joy to talk to about the food and his experience. Highly recommend if you want a more intimate formal dining experience.

Celebrated my one year anniversary here with my husband and we loved it! Carlos greeted us at the front door by name and this was our first time ever being here. Even with other parties in the room it felt like we received a private dining experience. Carlos made great menu recommendations and the food was fantastic! I had the steak filet mignon and my husband had the lamb chops everything was cooked to perfection! We absolutely enjoyed our dining experience here and will recommend everyone visit Carlos.

It's a very nice restaurant. Food was very good and Carlos was very friendly. Food was absolutely excellent. Best beef wellington I have ever eaten. The only reason I give it 4 stars is because the food was over priced. It was just my wife and me; we did not have anything to drink other than water and our bill after a 20% tip was $330. Amazing Fine Dining Experience! Carlos is great and makes sure diners are well taken cared of! From the food and the ambience, everything is a work of art! Must go gem in Colorado Springs! My husband and I had dinner at Carlos Bistro this evening. It was one of the best meals we have had it quite some time. The food amazing, the service was excellent, and the atmosphere was wonderful. Carlos and his staff created a fantastic dining experience. We will definitely be returning soon.

The best plafe in town for fine dining. Exquisite quality, superb service, fine dessert. The ambiance is top notch and very quaint.
