This is hands down the best restaurant I have ever eaten at in Colorado, not just in Colorado Springs. I have eaten at Michelin star restaurants in California, and I have been craving food like this since returning to Colorado. While I have found ok to good food in the Springs before, I have never experienced something as spectacular as this. I had heard great things about this place and finally went to try it tonight. During a business trip to Colorado Springs, a group of 15 of us dined at Carlos' Bistro. Carlos and Liz took the time to learn the names of everyone in our group, which became evident as we were leaving and they bid each of us farewell personally. The filet was exceptional – the best we have ever had. Even compared to popular steakhouses like Ruth's Chris and Eddie V's, Carlos' surpassed them all. One member of our group casually mentioned that it was his wife's birthday the next day, and when dessert was served, Liz had prepared a special treat for her. We have been dining at Carlos Bistro for all of our special occasions for years. Carlos has never disappointed. From the charming owner (Carlos), to his amazing waitstaff, you will truly receive personalized service and they always make you feel special. The food is truly an experience. Amazing flavors and beautifully presented. The ambiance is lovely and relaxing. I always feel pampered and special after an evening of dining at Carlos Bistro. I would rate them the absolute best dining experience in Colorado Springs.

Carlos bistro is a hidden gem in Colorado Springs. If you’re looking for a fine dining experience with a large breadth of food and drink items, Carlos bistro is the place to go. Every time we go, Carlos treats us like old friends! Dietary restrictions: If you have any dietary restrictions, he can recommend dishes or make accommodations to support your needs! We had an amazing experience! We came to Carlos Bistro to celebrate our honeymoon, and boy was it easy to celebrate. Every meal was cooked to perfection, such a great array of options for cocktails and the crème brûlée was the most amazing thing I’ve ever eaten. Carlos and staff were so respectful, made conversation, greeted you by name, and really just made it an overall wonderful experience. Would highly recommend!! Service: Dine in
