About a decade ago I decided to give my wife the best dinner I could buy her. We were in Rome and I took her to the top-rated restaurant in Rome and asked them to make us happy. It was a remarkable meal in many ways, not least the ambiance of the balcony on a 75 degree summer night with the bells of St Peter’s wafting below us. And yes it cost a fortune. We went tonight to Momento’s in Evora, with nothing like the expectations of that meal in Rome. Chef Jorge Fava Rica was amazing, not only in his preparations but in the hands-on way he interacted with us, explaining everything on the menu personally, repeatedly checking with us, and treating us as friends rather than mere customers.
